A true winter highlight is tasting Icewine, a style of dessert wine for which Canada is world-renowned. Icewine is made from grapes left on the vine until temperatures drop to at least -8°C. Often harvested in the still of night, the frozen grapes are pressed immediately while solid, concentrating their natural sugars and flavours. The result is a luxuriously sweet wine with vibrant fruit notes, perfect for sipping slowly or pairing with dessert.
